Shrimp Stir Fry

This shrimp and broccoli stir fry is a quick and easy meal that is full of fresh and zesty flavors. The shrimp are cooked with ginger and garlic, then tossed with crisp broccoli and a tangy orange sauce. You can serve this over rice, noodles, or any grain you like. Or make it vegan by using crispy tofu instead of shrimp. This dish is ready in less than 30 minutes and perfect for a weeknight dinner!

Ingredients

  • 1/2 cup orange juice
  • 1 teaspoon orange zest
  • 1 tablespoon + 1 teaspoon minced ginger, divided
  • 2 garlic cloves + 1/2 teaspoon minced garlic, divided
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 3 tablespoons tamari or soy sauce
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch
  • 1 pound shrimp, peeled and deveined (or use crispy tofu)
  • Salt to taste
  • Oil for frying
  • 4 cups broccoli florets (and stems if you like)
  • 1/4 cup sliced red onion or shallot
  • Sesame seeds, green onions, and more red pepper flakes for garnish (optional)

Instructions

  1. In a small bowl, whisk together the orange juice, orange zest, 1 tablespoon ginger, 2 garlic cloves, maple syrup, sesame oil, tamari, red pepper flakes, and cornstarch. Set aside.
  2. Season the shrimp with salt. Heat some oil in a large skillet over medium-high heat. Add the shrimp and 1 teaspoon ginger and 1/2 teaspoon garlic. Cook for about a minute per side, until pink and cooked through. Transfer to a plate and keep warm.
  3. Add more oil to the same skillet if needed. Add the broccoli and stir fry for about 5 minutes, until crisp-tender. Add the onion or shallot and cook for another 3 minutes, stirring occasionally.
  4. Pour the orange sauce over the broccoli mixture and bring to a boil. Cook for about a minute, stirring, until the sauce is thickened and glossy.
  5. Return the shrimp to the skillet and toss to coat with the sauce. Turn off the heat and serve with rice or noodles if desired. Sprinkle with sesame seeds, green onions, and more red pepper flakes if you like some heat.
