Warm Red Cabbage Slaw

This warm red cabbage slaw is a tasty and healthy winter side dish that goes well with many festive meals. It has a sweet and tangy flavor from red wine vinegar, a touch of natural sweetener and a hint of clove. It also has a nice crunch from tart green apples and tender red cabbage. It’s easy to make, vegan and gluten-free, and keeps well in the fridge for a few days.

Ingredients

  • 1 medium onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 large green apple, chopped into small pieces (about 1 1/2 cups)
  • 3 tablespoons coconut sugar, maple syrup or brown sugar
  • 3 tablespoons red wine vinegar, plus more to taste
  • Salt and pepper to taste
  • A pinch of ground cloves
  • 1 small head of red cabbage, shredded (about 6 cups)

Instructions

  • In a large skillet over medium heat, heat olive oil and cook onion for 2 minutes, stirring occasionally.
  • Add apple, coconut sugar (or other sweetener), red wine vinegar, salt, pepper and cloves and stir to combine.
  • Add red cabbage and cook over low heat for 20 minutes, stirring occasionally, until cabbage is wilted and tender.
  • Adjust vinegar, salt and pepper to your liking.
  • Enjoy warm or cold.
