Spicy Corn Fritters with Cilantro Cream

Corn fritters are a crispy and delicious way to enjoy fresh corn in season. They are easy to make with a simple batter that is loaded with corn kernels, bell pepper, jalapeño, lime and cheese. You can fry them in a skillet until golden and crunchy on the outside and tender and moist on the inside. To make them even more flavorful, serve them with a creamy and refreshing cilantro cream sauce that is made with yogurt, sour cream, cilantro, garlic and lime juice. These corn fritters are perfect as a snack, appetizer or side dish for any occasion.

Ingredients

  • For the corn fritters:
  • 3 cups of fresh corn kernels (from about 4 ears of corn) or canned or frozen corn (thawed and drained)
  • 1/4 cup of finely chopped red bell pepper
  • 1/4 cup of finely chopped jalapeño pepper (seeded and deveined for less heat)
  • 2 tablespoons of finely chopped green onion
  • 2 teaspoons of grated lime zest
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 teaspoon of baking soda
  • 1/4 cup of all-purpose flour
  • 2 eggs, lightly beaten
  • 1/2 cup of shredded cheddar cheese
  • Vegetable oil for frying
  • For the cilantro cream sauce:
  • 1/2 cup of plain yogurt
  • 1/4 cup of sour cream
  • 1/4 cup of chopped fresh cilantro
  • 1 garlic clove, minced
  • 2 tablespoons of lime juice
  • Salt and pepper to taste

Instructions

  1. To make the corn fritters, combine the corn, bell pepper, jalapeño, green onion, lime zest, salt, pepper, baking soda and flour in a large bowl and mix well.
  2. Stir in the eggs and cheese until well combined.
  3. Heat about 1/4 inch of oil in a large skillet over medium-high heat. Drop heaping tablespoons of the batter into the hot oil and flatten slightly with a spatula. Fry for about 3 minutes per side or until golden and cooked through. Drain on paper towels and keep warm in a low oven while you fry the rest of the batter.
  4. To make the cilantro cream sauce, whisk together the yogurt, sour cream, cilantro, garlic and lime juice in a small bowl. Season with salt and pepper to taste.
  5. Serve the corn fritters hot with the cilantro cream sauce on the side or drizzled over them. Enjoy! 😋
