Sauteed Fava Beans

Fava beans are a delicious spring treat that can be enjoyed in many ways. In this recipe, we will show you how to sauté them with shallots, mint, lemon and cheese for a simple and satisfying side dish. You can also add them to pasta, risotto or salads for more variety.

Ingredients

  • Fava beans (in the pod) – You will need about one pound of fava beans in the pod to get one cup of shelled and peeled beans. Look for young and tender pods that are bright green and firm.
  • Olive oil
  • Vegetable broth or chicken stock or water
  • Lemon (juice and zest)
  • Salt and pepper to taste
  • Fresh mint leaves
  • Ricotta Salata – This is a hard and salty cheese made from ricotta. You can also use pecorino, parmesan or manchego instead.

How to Sauté Fava Beans

Step one: Remove the fava beans from the pods. Pinch the end of the pod and pull down the string along the side. This will open up the pod like a zipper. Use your thumb to pop out the beans. Discard the pods.

Step two: Blanch the fava beans in boiling salted water for 15 to 20 seconds. Drain and plunge them into cold water or ice water to stop the cooking process.

Step three: Peel off the outer skin of the medium and large fava beans. You can leave the small ones intact if they are tender enough. The peeled beans will be bright green and plump.

Tip: You can do steps one to three ahead of time and store the peeled beans in the fridge for up to three days.

Step four: Heat some olive oil in a skillet over medium-high heat. Add some chopped shallots and pepper and cook until soft, about five minutes.

Step five: Add the fava beans and a splash of broth or water and simmer gently until the beans are tender, about three to four minutes. Season with salt, lemon zest, lemon juice and red pepper flakes if you like some heat.

Step six: Transfer to a serving platter or bowl and garnish with torn mint leaves and shaved cheese. Drizzle with some more olive oil if desired.
