Quick Easy Egg Bites

If you are looking for a simple and satisfying breakfast that you can prepare ahead of time, look no further than these egg bites. They are similar to the ones you can find at Starbucks, but much cheaper and customizable. You can make them in less than an hour, and store them in the fridge or freezer for busy mornings. They are also keto-friendly and vegetarian.

The secret to making these egg bites creamy and custardy is to bake them in a water bath in the oven. This creates steam that helps cook the eggs evenly and gently.

Ingredients

  • 6 large eggs
  • 1/2 cup whole milk cottage cheese
  • 1/2 cup shredded cheese (gruyere, mozzarella, pepper jack, cheddar or a blend)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped roasted peppers
  • 1/4 cup chopped cherry tomatoes
  • 2 tablespoons chopped fresh basil leaves

Instructions

  1. Preheat oven to 300°F and place a baking dish with about 1/4 inch of water on the bottom rack. This will create steam in the oven.
  2. In a blender, combine eggs, cottage cheese, shredded cheese, salt and pepper. Blend until smooth and frothy.
  3. Spray a 12-cup nonstick muffin tin with oil and divide the egg mixture evenly among the cups.
  4. Sprinkle roasted peppers, tomatoes and basil over the egg mixture, and gently stir them in with a fork.
  5. Place the muffin tin on the middle rack of the oven and bake for 20 to 24 minutes, or until the egg bites are puffed up, golden and set in the center.
  6. Let them cool for 5 to 10 minutes on a wire rack, then run a knife around the edges of each cup and scoop out the egg bites with a large spoon.
  7. Enjoy warm or at room temperature, or let them cool completely and store them in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months. Reheat in the microwave for about a minute or in the toaster oven until warm.

Variations

You can use any combination of ingredients you like for these egg bites. Here are some suggestions:

  • Sauteed mushrooms, thyme and gruyere cheese
  • Caramelized shallots, smoked mozzarella cheese and sage
  • Smoked salmon and fresh dill
  • Spinach, sundried tomato and goat cheese
  • Bacon crumbles, jalapeno and cheddar cheese
  • Canned green chilies, cilantro and pepper jack cheese
