This is a warm and satisfying dish that combines soft gnocchi, spicy sausage, and nutritious kale in a rich tomato sauce. You can easily adapt it to your preferences by using vegetarian or vegan sausage, or adding other vegetables or beans. The best part is that it only takes one pan and 30 minutes to make!
Ingredients
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 teaspoon fennel seeds
- 28 oz can whole peeled tomatoes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 4 cups chopped kale
- 16 oz cooked Italian sausage links, sliced (or vegetarian/vegan alternative)
- 16 oz gnocchi (homemade or store-bought)
- 1/4 cup grated parmesan cheese
- 8 oz fresh mozzarella cheese, sliced
Instructions
- Preheat oven to 350°F. In a large oven-proof skillet or braiser over medium heat, heat olive oil and sauté garlic, red pepper flakes, and fennel seeds for 2-3 minutes, stirring frequently.
- Add tomatoes, salt, pepper, and oregano to the skillet and use a spoon to break up the tomatoes into chunks. Bring the sauce to a simmer and cook for about 10 minutes, stirring occasionally.
- Add kale to the sauce and stir to wilt. Remove from heat and stir in sausage and gnocchi. Sprinkle parmesan cheese over the top and arrange mozzarella slices evenly over the cheese.
- Bake for 20 minutes uncovered, or until cheese is melted and bubbly. Enjoy!
