Avocado Toast with Poached Eggs Arugula and Zaatar

If you are looking for a simple and delicious breakfast, lunch or light dinner, try this avocado toast with poached eggs, arugula and zaatar. It’s a nutritious and satisfying meal that can be ready in just 15 minutes. The zaatar spice, a Middle Eastern blend of cumin, sumac, thyme, coriander and sesame seeds, adds a tangy and earthy flavor to the creamy avocado and the runny egg. The arugula and radishes add some freshness and crunch, while the meyer lemon gives a zesty touch. You can also spice it up with some zhoug sauce or gremolata if you like.

Ingredients

  • 1 large ripe avocado
  • 1 lemon- zest and juice (or use meyer lemon)
  • 3 teaspoons olive oil – divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 slices wholesome bread
  • 1/2 cup baby arugula
  • 4 radishes, very thinly sliced
  • 2 eggs (large) – cracked into a small bowl ( eggs are optional-see notes)
  • pinch salt and pepper
  • generous pinch zaatar spice (or sub cumin, sumac, or coriander)
  • Aleppo chili flakes (optional)
  • zhoug sauce ( optional)

Instructions

  1. Fill a medium pot with 2-3 inches of lightly salted water and a teaspoon of white vinegar (optional) and bring it to a boil on the stove. Crack the eggs into a bowl, taking care to keep yolks intact, set aside.
  2. Cut the avocado in half, remove the pit and scoop out the flesh into a small bowl. Mash it with a fork and stir in the lemon zest, lemon juice, 2 teaspoons of olive oil, salt and pepper.
  3. Toast the bread slices until golden and crisp.
  4. Spread the avocado mixture evenly over the toast slices and top with the sliced radishes.
  5. In a small bowl, toss the arugula with the remaining teaspoon of olive oil, a squeeze of lemon juice and a pinch of salt.
  6. When the water is boiling, lower the heat to a simmer and gently slide the eggs into the water one by one. Poach for about 3 minutes or until the whites are set but the yolks are still runny. You can also fry the eggs if you prefer.
  7. Carefully remove the eggs from the water with a slotted spoon and place them on top of the avocado toast. Sprinkle with zaatar spice, Aleppo chili flakes if using, and more salt and pepper if needed.
  8. Serve immediately with some zhoug sauce or gremolata on the side if desired.
